Massaged Kale Salad

If you're craving something cool, healthy and super green, try this massaged kale salad recipe.  

1.  1 lb kale, stems trimmed off and leaves cut into 1/4 slices (I used lacinto kale)

2.  1 avocado, cut into chunks

3.  1/2 red onion, thinly sliced

4.  1/2 cup sunflower seeds, toasted for the buttery nutty flavor, but not necessary

5.  1/3 cup lemon juice

6.  1/3 cup wheat-free tamari

7.  1/3 extra virgin olive oil

First, combine dressing ingredients, making sure to drizzle the olive oil slowly.  Place your sliced red onion in to the dressing to marinate while you prepare the rest of the ingredients.  Slice up kale pieces and and lightly toast sunflower seeds for a few minutes.  Combine, kale, sunflower seeds and dressing mixture into a large bowl and dig in with your hands.  Massage ingredients for a few minutes...this will soften the toughness of the kale and soak up all the good flavors.  Finally toss in your fatty nutrient-rich avocado and lightly toss.  

Grill up a fat piece of meat and you'll really have yourself a happy ending!

Mid Morning Delish

Ok...so...my morning protein smoothie didn't quite cut it. I dished up some whole fat Greek yogurt with a bit of raw honey and raw almonds and a handful of organic blueberries. I think that should tide me over...Baby Moto thinks so!
The yogurt I used contains 18 grams of protein and 23 grams of fatty goodness and the good probiotics your gut needs to keep you healthy!  Not to mention the high fat and protein content of the raw almonds...could've kept the raw honey out for carbs sake, but today was a bit of a splurge...do I really to say anything about the fab organic blueberries that are still in season? I didn't think so...enjoy!

OMG! Seared Tuna Salad

Sooo....sad to say, I forgot to take a picture of the end product (too hungry), but, ohhhh my goodness, this was a tasty super easy salad to throw together.  I was craving something fresh and light because we have been blessed with some of the best hot weather all year!  I adapted the recipe from the "Quick and Easy Primal Cookbook".  (I don't have any exact measurements, but what I prepared was more than enough for two people!)

Ingredients:

3/4 to 1 lb of tombo tuna (any tuna will do)

2-3 slices of bacon

1/2 avocado

2 giant handfuls of baby spinach

Cherry tomatoes (handful), cut in half (my husband won't eat them unless they are...weird)

Red onion, thinly sliced

2 Tbsp lemon juice

Olive Oil

 

Cook the bacon, let cool and chop into small pieces.  Heat up a pan on high.  While that is heating up, brush the tuna with oil and lightly salt and pepper.  After the pan is hot, add the tuna and sear for 3 minutes on each side (less if you like it more rare).  After the tuna has cooled a bit, slice into pieces.

Mix together the lemon juice and olive for dressing, although not much is needed, because there are so many great flavors happening in the bowl!

Assemble all the ingredients, add the dressing and you have a fancy healthful salad that'll knock your socks off!

On-the-Go Egg Muffins

There really is  no excuse for not eating something in the morning!  I kept hearing from my patients that they don't eat breakfast for some reason or another...usually it was a time factor.  When I started going primal/paleo, finding anything that I was used to eating (aka grains and/or dairy) was not an option.  Until, I discovered these delicious, easy to make egg muffins.  Make enough for a few days, and yes, these will keep for a few days in the fridge!  Just pop 1-2 two these little egg-o-licious babies in the micro and you'll have a filling protein packed breakfast on the go...no excuses!

 

1.  Saute whatever organic veggies and organic grass-fed meat you enjoy with eggs, spinach, peppers, onions, mushrooms...WHATEVER...with some coconut oil or organic butter/ghee.

2.  Spoon the veggie mixture into a paper line muffin tin.

3.  Whip up 6-7 eggs and fill each cup about 3/4 the way full.

4.  If you're doing dairy, sprinkle some goat's milk on top.

5.  Bake at 350 degrees for 18-20 minutes.
